Since the end of the '80s, the Rücker GmbH is producing mozzarella. For obtaining its significant characteristics, the traditional manufacturing process is used. In this process, the raw cheese mass is scalded and formed to a soft mouldable dough by kneading.
The Rücker GmbH solely produces a firm variant of mozzarella. These products differ from "Italian" mozzarella by a higher dry matter that makes them ideal for grating. |
